Les Capitulaires de Charlemagne ou les archives du 16ème siècle de La Châtre témoignent de l’importance de l’élevage caprin dans le Bas Berry.

Mais histoire ou légende, on dit que le Prince de Talleyrand est à l’origine du fromage de Valençay. Afin que la vue de ces fromages de chèvre, en forme de belles pyramides n’offusqua point l’Empereur en lui rappelant sa malheureuse campagne d’Egypte, Talleyrand ordonna à son intendant de changer la forme des moules. Ainsi le fromage fabriqué à Valençay et dans les environs prît la forme qu’on lui connaît aujourd’hui.

Le Prince de Talleyrand a fait connaître la Pyramide de Valençay aux bonnes tables aristocratiques parisiennes.

Le 13 juillet 1998, le Valençay entre dans la famille des fromages sous appellation d’origine contrôlée.

Thus The cheese made to Valençay and in the vicinity, took the form that one knows him today.

The Prince of Talleyrand made known the Pyramid of Valençay to the good Parisian aristocratic tables.

The Pyramid of Valençay is recognized cheese of Appellation d’origine Contrôlée by the decree published on the 13th July 1998.
